The Jones Sisters of Jones Bar-B-Q in Kansas City

Meet sisters and pitmasters, Mary and Deborah Jones. But first, you’ll need to get in line.

These Bar-B-Queens have gone from local celebrities to internationally renowned culinary artists. Their no-frills approach inspired people to make the pilgrimage to Jones Bar-B-Q from places all over the globe, even as far as Australia.

Jones Bar-B-Q is a complete barbecue experience, it boasts an authenticity only found from a humble, family-run joint operating in a roadside parking lot. The sisters’ pit prowess draws a crowd, creating a friendly line of characters as flavorful as the reward for reaching the end of it. If you’re lucky there will be some burnt ends still up for grabs (burnt ends, a Kansas City delicacy, are the crispy point-ends of a smoked brisket). No matter the selection, they’re all delicious and best enjoyed from a patio picnic table watching 18 wheelers and locomotives grunt past.

The ambience is the perfect embodiment of the Jones Sisters, two pitmasters dedicated to sacred old-school practices and family recipe. They’re constantly in motion, operating with the coordination (and head-butting) that only a pair of sisters could possess.

“People always making a big deal about us being women pitmasters, but women have been doing things all along. We just never got credit for it.” -Deborah

Leavy B. Jones Sr. laid the groundwork for Jones Bar-B-Q decades ago. Growing up during the depression made him resilient and wise. He was a proponent of honest work and honest business. That’s why he poured his soul into stoking the pit.

“When our daddy first opened the restaurant, he used to stand out on the street waving a racing flag at drivers to get them to pull over. He would give them a little taste of the barbecue for free, and that’s how he got customers.” -Deborah

Leavy’s creativity didn’t stop there, in fact you can still taste it today in the Jones Style BBQ Sauce. The sisters began bottling their famous flavors last year—but they’ll still never give up the secret ingredient. You’ll just have to try it for yourself.

There was a brief pause in business following the passing of Jones Sr., but the girls didn’t just inherit his culinary talent, but also his drive and work ethic.

“My daddy always taught us ‘I don’t care how many times you fall down. Get back up and brush yourself off.’” -Deborah

The sisters reopened their doors with a mission to put Deborah’s daughter, Izora, through school, debt free. Since then, they’ve accomplished that and so much more.

The sisters made their very own, temperature controlled barbecue vending machine. Now you can stop by for their famous meats and sauce at any hour.

The way to your dad’s heart is through his stomach. With Father’s Day just around the corner, give him a tasty treat the whole family can enjoy– whiskey BBQ sauce, made with love. If you’re Dad likes to grill, let him cook up a storm. Or you can go the extra mile and fire up the grill yourself.

What you need for the sauce:
3/4 cups of honey whiskey
1/3 cup of apple cider vinegar
1/4 cup Worcestershire sauce
1/2 cup dark brown sugar
1/2 teaspoon of pepper
1 teaspoon of Sriracha
1/2 teaspoon of salt
1/2 a sweet onion
2 cups of ketchup
4 garlic cloves

1. heat the onion, garlic, and whiskey in a pan for 10 minutes
2. separately mix the ketchup, vinegar, Worcestershire, brown sugar, Sriracha, salt and pepper
3. combine the two mixtures in the pan and simmer for 20 minutes (stir occasionally)
4. can it, refrigerate it, and give it to your pops!

Welcome to hell’s half acre, folks! That’s the affectionate way Stubb referred to what is now the location of Stubb’s BBQ in Austin. It is the place for good BBQ, good beer, and good music. So much history is jam packed into that joint. Stubb, respected war veteran and a real good cook,
opened up his first restaurant in 1968. It was all about that hickory pit and the blues. Legends like Stevie Ray Vaughn, Johnny Cash, Muddy Waters, and Willie Nelson all played there.

Even though Stubb passed a few years back, his spirit lives on in the food and the work ethic that drives the place now. Sarah, pictured above, started off as a bartender at Stubb’s and eventually worked her way up the ladder. She’s now the Special Events and Catering Director. There’s nothing like hard work to get you where you want to go.

I think I should preface this post by telling you that I am a Texan girl who knows her bar-b-que. Last night I had one of the best meals of my life at Sweet Cheeks Q, a BBQ joint in Boston near Fenway Park. You might recognize Tiffani, chef and owner of Sweet Cheeks, as one of the two finalists on the first season of Top Chef. I have to admit that’s one of my favorite shows of all time, even though I’m a total mess in the kitchen!

Tif buys local ingredients for her restaurant. It’s great to see local businesses supporting local farming, and the freshness it brings to the food is undeniable. I can’t even pick out a favorite from the feast they presented me with last night. From the fried okra, to the pork belly, even to the rolls— every bite was pure happiness in my mouth.
